  • 8 oz Feta Cheese Can substitute with halloumi or goat cheese
  • 2 tbsp Fresh Dill
  • 2 tbsp Fresh Mint
  • 1 tsp Lemon Zest
  • 1/2 tsp Freshly Ground Black Pepper
Pastry
  • 10 sheets Phyllo Pastry Handle with care to prevent tearing
  • 1/2 cup Olive Oil For brushing the phyllo
Drizzle
  • 1/2 cup Honey
  • 1 tbsp Chili Flakes
  • 1 tbsp Lemon Juice

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine feta, dill, mint, lemon zest, and black pepper until well blended.
  3. Unfold phyllo pastry sheets, brush with olive oil, and layer two sheets together.
  4. Cut the layered phyllo into four lengthwise strips.
  5. Place one tablespoon of filling on one end of each strip, then roll tightly.
  6. Brush tops of rolls with olive oil and place seam-side down on the baking sheet.
  7. Bake in the preheated oven for 18-20 minutes until golden brown.
  8. In a saucepan, combine honey, chili flakes, and lemon juice, heating until runny.
  9. Drizzle the warm chili honey over the baked rolls and serve.
