Ingredients

  • 1 large English Cucumber Keep the skin on for extra nutrients.
  • 2 cups Pineapple Fresh is best, but drained canned works too.
  • 1/2 cup Lime Juice Always opt for freshly squeezed for the best taste.
  • 1 thumb-sized piece Fresh Ginger Peeled, adjust based on desired spiciness.
  • 1 handful Fresh Mint Can swap with basil for a unique flavor.
  • 4 cups Water Coconut water can be used for added sweetness.
Optional Sweetening
  • 1 tablespoon Pure Maple Syrup Sweeten to taste; can be adjusted or omitted.

Method
 

Blend and Prepare
  1. Combine the peeled and chopped English cucumber, fresh pineapple chunks, lime juice, ginger, and fresh mint in a blender. Add water and blend on high for 30-45 seconds until smooth.
  2. Taste and adjust sweetness with maple syrup if desired, then blend for a few more seconds to incorporate.
  3. Strain the mixture through a fine sieve or cheesecloth into a bowl, pushing through liquid to extract juice.
  4. Transfer the strained liquid into a pitcher filled with ice and stir gently to mix.
  5. Serve in glasses filled with ice, optionally adding a splash of spirit, and garnish with fresh mint.
