  • 1 lb Ground Turkey Can substitute with ground chicken or plant-based alternative.
  • 1 can Black Beans Rinse and drain if canned, or prepare dried beans ahead.
For the Topping
  • 1 cup Cheese Cheddar or Monterey Jack recommended.
  • 1 medium Avocado Can be used instead of sour cream.
  • 1/2 cup Sour Cream Greek yogurt is a great alternative.
  • 3 stalks Green Onions Chopped, adds crunch and flavor.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather your baking sheet and parchment paper.
  2. Wash the sweet potatoes under running water and pierce them several times with a fork. Place on a baking sheet and bake for 45-60 minutes until tender.
  3. In a skillet, heat the ground turkey over medium heat, breaking it apart. Add spices and sauté for 8-10 minutes until browned.
  4. Stir in the black beans and cook for an additional 5 minutes.
  5. Once cool, slice the sweet potatoes open and scoop out some flesh. Fill each with the turkey-bean mixture.
  6. Sprinkle cheese on top and return to the oven for 5-10 minutes until melted.
  7. Top with avocado, sour cream, and green onions before serving.
