Preparation Steps
  1. Gather all ingredients. Rinse cucumbers under cold water. Chop green onions and crush garlic.
  2. In a medium bowl, combine sugar, sesame seeds, garlic, and green onion. Add soy sauce, rice vinegar, chili oil, and sesame oil, whisk until well blended.
  3. Spiral cut cucumbers using chopsticks to prevent cutting through. Make cross-cuts for accordion shapes.
  4. Salt cucumbers in a large bowl, massage for 2 minutes, and let sit for 8-10 minutes.
  5. Rinse cucumbers and pat dry. Combine cucumbers with the dressing and marinate in the refrigerator for 10 minutes.
