- Gather all ingredients. Rinse cucumbers under cold water. Chop green onions and crush garlic.
- In a medium bowl, combine sugar, sesame seeds, garlic, and green onion. Add soy sauce, rice vinegar, chili oil, and sesame oil, whisk until well blended.
- Spiral cut cucumbers using chopsticks to prevent cutting through. Make cross-cuts for accordion shapes.
- Salt cucumbers in a large bowl, massage for 2 minutes, and let sit for 8-10 minutes.
- Rinse cucumbers and pat dry. Combine cucumbers with the dressing and marinate in the refrigerator for 10 minutes.
