Method
 

Step-by-Step Instructions
  1. In a small bowl, whisk together fresh lemon juice and kosher salt until salt is dissolved. Gradually add olive oil while whisking until emulsified. Set aside.
  2. In a large bowl, add diced beets and pour in half of the dressing. Toss to coat and let marinate for 10-15 minutes.
  3. Slice cucumber into thin rounds and place in a separate bowl.
  4. Just before serving, add cucumber, crumbled feta, and chopped dill to the marinated beets. Drizzle with remaining dressing.
  5. Gently toss ingredients together. Serve immediately.
