Ingredients
  

For the Sweet Potatoes
  • 4 medium Sweet Potatoes Choose uniform sizes for even roasting.
  • 2 tbsp Olive Oil Can be swapped with avocado oil.
For the Black Bean Filling
  • 1 can Black Beans Rinsed and drained.
  • 1 cup Cherry Tomatoes Chopped; regular tomatoes work too.
  • 1 cup Corn Fresh, frozen, or canned.
  • 1/4 cup Cilantro Finely chopped; optional.
  • 1/2 medium Red Onion Diced; can substitute green onions.
  • 2 cloves Garlic Minced; fresh is preferred.
  • 2 tbsp Lime Juice Freshly squeezed is best.
  • 1 tsp Sea Salt Adjust to taste.
  • 1/2 tsp Black Pepper Adjust to taste.
  • 1/4 tsp Chili Flakes Optional; for added heat.
For the Toppings
  • 1 medium Avocado Ripe, for guacamole.
  • 1/2 cup Coconut Yogurt Vegan alternative for sour cream.

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. Poke holes in sweet potatoes and coat with olive oil. Place on the tray.
  3. Roast sweet potatoes for 40 minutes to 1 hour, until fork-tender.
  4. In a mixing bowl, combine black beans, tomatoes, corn, cilantro, onion, garlic, lime juice, olive oil, salt, pepper, and chili flakes.
  5. Mash the avocado with lime juice and salt until smooth.
  6. Mix coconut yogurt with lime juice and salt until smooth for a vegan sour cream.
  7. Cut each sweet potato in half, spoon in the black bean mixture, top with guacamole and vegan sour cream.
  8. Serve warm and enjoy your colorful dish!
