Ingredients
  

For the Chicken Marinade
  • 4 pieces Chicken Breast or thighs for richer flavor
  • 1/4 cup Olive Oil or avocado oil
  • 1/4 cup Lemon Juice fresh is best
  • 3 cloves Garlic freshly minced
  • 1 tablespoon Oregano fresh for better taste
  • to taste Salt & Pepper
For the Base
  • 2 cups Rice or Quinoa quinoa offers higher protein
For the Fresh Veggies
  • 2 cups Fresh Veggies (cucumbers, tomatoes, onions, etc.) customize as desired
For the Tzatziki Sauce
  • 1 cup Greek Yogurt or dairy-free yogurt for vegan
  • 1 clove Garlic freshly minced
  • 1/2 cup Cucumber finely grated
  • 1 tablespoon Lemon Juice fresh for best flavor
  • 2 tablespoons Fresh Herbs dill or mint

Method
 

Instructions
  1. In a medium bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper to create a zesty marinade. Pound the chicken breasts and immerse them in the marinade. Cover and refrigerate for at least 30 minutes.
  2. In a separate bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and chopped fresh herbs. Mix well until smooth and set aside in the refrigerator.
  3. Prepare your rice or quinoa according to package instructions. Chop your chosen fresh veggies.
  4. Preheat your air fryer to 380°F. Place the marinated chicken in the basket and air fry for 7 minutes. Flip and cook for an additional 3-4 minutes until cooked through.
  5. To assemble, create a base layer of grains in each bowl, add fresh veggies, slice the chicken, and drizzle with tzatziki and a squeeze of lemon juice.
