- In a medium bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper to create a zesty marinade. Pound the chicken breasts and immerse them in the marinade. Cover and refrigerate for at least 30 minutes.
- In a separate bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and chopped fresh herbs. Mix well until smooth and set aside in the refrigerator.
- Prepare your rice or quinoa according to package instructions. Chop your chosen fresh veggies.
- Preheat your air fryer to 380°F. Place the marinated chicken in the basket and air fry for 7 minutes. Flip and cook for an additional 3-4 minutes until cooked through.
- To assemble, create a base layer of grains in each bowl, add fresh veggies, slice the chicken, and drizzle with tzatziki and a squeeze of lemon juice.
