  • 1 medium red onion or yellow onion as a substitute
  • 1 teaspoon smoked paprika can use regular paprika if desired
  • 1 cup shredded cheddar cheese swap for pepper jack for extra spice
  • 2 tablespoons olive oil avocado oil works well as an alternative
  • to taste salt
  • to taste pepper
  • 2 tablespoons chopped green onions or fresh parsley/cilantro

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add 2 cups of diced sweet potatoes, seasoning with salt and pepper. Sauté for 10-12 minutes until tender.
  3. Stir in diced red onion and 1 cup of corn, sauté for another 5 minutes until onions are translucent.
  4. Add in 2 cups of shredded cooked chicken and ¾ cup of BBQ sauce. Stir well and heat for 3-5 minutes.
  5. Sprinkle 1 cup of shredded cheddar cheese over the skillet, cover, and let cook for 2-3 minutes to melt the cheese.
  6. Remove from heat and garnish with chopped green onions. Serve hot.
