  • 1 tablespoon Sesame Oil
For the Stir Fry
  • 2 tablespoons Cornstarch
  • 1 pound Baby Bok Choy
  • 1 pinch Salt
  • 2 tablespoons Peanut Oil or vegetable oil
  • 8 ounces Brown Mushrooms halved or quartered
  • 2 pieces Dried Chinese Chili Peppers adjust for heat preference
  • 3 cloves Garlic Cloves minced
  • 1 thumb-sized Fresh Ginger freshly minced
  • 2 stalks Green Onions sliced thin for garnish

Method
 

Step-by-Step Instructions
  1. Prepare the Sauce by whisking together water, soy sauce, vegetarian oyster sauce, sugar, black pepper, and sesame oil until well combined.
  2. Make the Slurry by combining cornstarch and a bit of water in a separate bowl, stirring until smooth.
  3. Steam the Bok Choy by bringing a skillet with a splash of water to a boil, adding baby bok choy with a pinch of salt, cover, and steam for 30 seconds.
  4. Sear the Mushrooms in a clean skillet with heated peanut oil, adding brown mushrooms in a single layer and searing for 1 minute.
  5. Cook the Aromatics by pushing seared mushrooms to one side and adding dried chili peppers, garlic, and fresh ginger to sauté until fragrant.
  6. Combine & Thicken by returning the steamed bok choy to the skillet, pouring the prepared sauce, and adding the cornstarch slurry, stirring until thickened.
