Creamy Feta Tzatziki

Method
 

Preparation
  1. In a large mixing bowl, combine olive oil, minced garlic, lemon juice, oregano, cumin, paprika, and salt and pepper to taste. Whisk until well blended.
  2. Add chicken breasts to the bowl and ensure each piece is thoroughly coated. Cover and refrigerate for at least 1 hour, ideally overnight.
  3. In a separate bowl, mix Greek yogurt, crumbled feta, grated cucumber, minced garlic, dill, mint, lemon juice, and salt and pepper to taste. Stir well and chill in the refrigerator.
  4. Preheat your grill to medium-high heat. Grill each piece of chicken for 6-7 minutes per side, checking for an internal temperature of 165°F.
  5. Once grilled, let the chicken rest for 5 minutes. Slice the chicken into thin strips.
  6. Warm pita bread on the grill for about 1 minute per side.
  7. To assemble the gyros, lay sliced chicken on the warm pita, top with tzatziki, and fresh veggies. Roll up the pita tightly and serve immediately.
