Preparation
- In a large mixing bowl, combine olive oil, minced garlic, lemon juice, oregano, cumin, paprika, and salt and pepper to taste. Whisk until well blended.
- Add chicken breasts to the bowl and ensure each piece is thoroughly coated. Cover and refrigerate for at least 1 hour, ideally overnight.
- In a separate bowl, mix Greek yogurt, crumbled feta, grated cucumber, minced garlic, dill, mint, lemon juice, and salt and pepper to taste. Stir well and chill in the refrigerator.
- Preheat your grill to medium-high heat. Grill each piece of chicken for 6-7 minutes per side, checking for an internal temperature of 165°F.
- Once grilled, let the chicken rest for 5 minutes. Slice the chicken into thin strips.
- Warm pita bread on the grill for about 1 minute per side.
- To assemble the gyros, lay sliced chicken on the warm pita, top with tzatziki, and fresh veggies. Roll up the pita tightly and serve immediately.
