Step-by-Step Instructions
  1. Begin by removing the membrane from the back of each rack of baby back ribs. Set the ribs aside.
  2. Brush a thin layer of yellow mustard over each rack of ribs.
  3. In a mixing bowl, combine your dry ingredients: dark brown sugar, smoked paprika, chili powder, granulated garlic, granulated onion, ground black pepper, white pepper, cayenne pepper, smoked sea salt, and kosher salt. Apply the rub generously to both sides of each rib rack.
  4. Wrap each coated rack of ribs tightly in aluminum foil to ensure there are no leaks.
  5. Preheat your oven to 275°F (135°C). Place the wrapped ribs on a baking sheet and bake for 2.5 hours.
  6. Check the ribs' internal temperature; it should read between 190°F and 200°F.
  7. For a charred finish, preheat your grill or broiler and brush the ribs with BBQ sauce. Grill or broil for 5-10 minutes until the sauce caramelizes.
