  • 1 tsp Paprika
  • 1 tsp Dried Oregano
For the Tzatziki Sauce
  • 1 cup Thick Greek Yogurt or dairy-free yogurt
  • 1 medium Cucumber grated and squeezed
  • 2 tbsp Lemon Juice
  • 2 tbsp Fresh Dill or Mint
For the Salad
  • Lettuce
  • Tomatoes
  • Cucumbers
  • Red Onion
  • Kalamata Olives

Step-by-Step Instructions
  1. Prepare the meatball mixture by combining ground beef, garlic, onion, breadcrumbs, baking soda, herbs, and olive oil in a mixing bowl. Season with salt and pepper, mix thoroughly, and chill for at least 2 hours.
  2. Preheat your oven to 425°F (220°C). Form the chilled mixture into meatballs about 1 to 1.5 inches in diameter and place them on a lined baking sheet.
  3. Bake the meatballs for 30 to 40 minutes, until golden brown and cooked through.
  4. Prepare the roasted potatoes by cutting them into wedges and tossing with oil and spices. Roast alongside the meatballs until crispy and golden.
  5. Make the tzatziki sauce by mixing yogurt, grated cucumber, lemon juice, and dill/mint in a bowl and let chill.
