- Prepare the meatball mixture by combining ground beef, garlic, onion, breadcrumbs, baking soda, herbs, and olive oil in a mixing bowl. Season with salt and pepper, mix thoroughly, and chill for at least 2 hours.
- Preheat your oven to 425°F (220°C). Form the chilled mixture into meatballs about 1 to 1.5 inches in diameter and place them on a lined baking sheet.
- Bake the meatballs for 30 to 40 minutes, until golden brown and cooked through.
