  • 1 teaspoon Onion Powder
  • 1 teaspoon Smoked Paprika

For the Rice
  • 1 cup Long-Grain Rice or substitute with quinoa or brown rice
  • 2 cups Chicken Broth or substitute with vegetable broth
For the Sauce
  • 1 cup BBQ Sauce experiment with different sauces
  • 1/4 cup Honey
For the Vegetables
  • 2 cups Mixed Vegetables fresh or frozen
  • to taste Chopped Green Onions/Parsley for garnish

Method
 

Cooking Steps
  1. Season the chicken by coating it with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Sear the chicken in a skillet with olive oil for 3-4 minutes on each side until browned.
  3. Toast the uncooked long-grain rice in the same skillet for 1-2 minutes.
  4. Add chicken broth, BBQ sauce, and honey to the skillet, mixing well.
  5. Nestle the seared chicken in the rice mixture.
  6. Cook the mixture for about 15 minutes covered, until the rice is fluffy and chicken is cooked through.
  7. Add mixed vegetables on top and cook for an additional 5 minutes.
  8. Remove from heat, let rest for 5 minutes, fluff with a fork, and garnish with green onions or parsley before serving.
