- Preheat your oven to 425°F (220°C). Gather your ingredients while the oven heats up.
- In a nonstick skillet, heat a splash of extra virgin olive oil over medium-high heat. Add sliced Vidalia onions, seasoning with kosher salt and black pepper. Sauté for about 10 minutes.
- Reduce heat to medium-low and cook the onions for an additional 30 minutes, stirring frequently until golden-brown.
- While the onions caramelize, rinse and trim fresh green beans. Place on a baking sheet, spritz with olive oil spray, and season with kosher salt and black pepper.
- Roast the green beans in the preheated oven for 16 to 18 minutes, giving them a toss halfway through.
- Transfer roasted green beans to a serving platter and top with the caramelized onions. Serve warm.
