Step-by-Step Instructions for Spinach Puffs
  1. Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. In a medium pan, heat olive oil and sauté minced garlic for about 2 minutes until soft.
  3. Add baby spinach to the pan, season with salt and pepper, and sauté for 3-4 minutes until wilted.
  4. Roll out the puff pastry and cut into squares for the desired size.
  5. In a mixing bowl, combine the spinach mixture with ricotta, parmesan, egg, salt, and pepper.
  6. Fill each pastry square with the spinach filling, then fold and seal the edges.
  7. Brush the tops with egg yolk and sprinkle sesame seeds for garnish.
  8. Bake in the preheated oven for 25-35 minutes until golden-brown and puffed up.
