For the Glaze
  • 2 tablespoons Olive Oil Can substitute with avocado oil.
  • 2 tablespoons Balsamic Vinegar Apple cider vinegar can be used.
  • 2 cloves Garlic Pre-minced or garlic powder can be used.
  • 1 tablespoon Maple Syrup Agave nectar can replace it.
  • 1 tablespoon Stone Ground Mustard Can substitute with Dijon or yellow mustard.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Wash and dry the sweet potatoes, poking holes in them. Bake for 45-60 minutes until soft.
  2. While baking, cook the brown rice. Heat olive oil in a skillet, sauté onion until translucent, then add bell pepper, pecans, and cranberries; heat through.
  3. In a bowl, mix olive oil, balsamic vinegar, minced garlic, maple syrup, mustard, salt, and pepper to create the glaze.
  4. After baking, cut the sweet potatoes in half, scoop out some flesh, and mix it with the filling before stuffing back into skins.
  5. Return the stuffed potatoes to the oven and bake for another 10-12 minutes. Drizzle with remaining glaze before serving.

Notes
