  1. Wash and dice about four medium-sized potatoes into small, even cubes. Set them aside.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the ground beef (or turkey) and cook for 5–7 minutes until browned.
  3. Add another tablespoon of olive oil, followed by chopped onion, green bell pepper, and minced garlic. Sauté for 3–4 minutes until the onion is translucent.
  4. Stir in ketchup, Worcestershire sauce, brown sugar, chili powder, paprika, salt, and pepper. Let it simmer for 5–7 minutes.
  5. Incorporate diced potatoes into the skillet and mix well. Pour in ½ cup of water, cover, and reduce heat to low. Cook for 15–20 minutes.
  6. After 15 minutes, check potatoes for tenderness. If needed, cook for an additional 5 minutes.
  7. Sprinkle shredded cheese over the skillet during the last couple of minutes if desired.
  8. Garnish with freshly chopped parsley and serve warm.
