- Prepare Tofu: Drain the tofu and wrap in a towel. Let sit for 10 minutes, then cut into cubes.
- Fry Tofu: Heat oil in a skillet, add tofu cubes and fry until golden brown, about 3 min per side. Drain on paper towels.
- Sauté Aromatics: In the same pan, add coconut oil, shallots, and sauté for 4-5 mins. Add ginger and cook for another 1 min.
- Make Sauce: Add coconut milk, sambal oelek, curry paste, sugar, ground coriander, and salt. Stir and simmer for 3-4 mins.
- Combine Tofu with Sauce: Fold in fried tofu, adjust seasoning as needed.
- Garnish & Serve: Transfer to a serving dish and garnish with sesame seeds, scallions, and red pepper flakes.
