- In a large mixing bowl, add approximately 6-8 ounces of fresh baby spinach. Rinse if not pre-washed and pat dry.
- Sprinkle about 2 tablespoons of dried cranberries over the spinach and gently toss to distribute.
- Add 1 can of mandarin oranges, drained and rinsed, and lightly fold into the spinach.
- Sprinkle in about 1 tablespoon of dry roasted sunflower kernels and mix gently.
- Top with 2 tablespoons of crumbled goat cheese and carefully fold into the salad.
- Drizzle with balsamic vinaigrette if desired, and toss gently to coat all ingredients.
