  • 1 can mandarin oranges approximately 11 ounces, drained and rinsed
  • 2 tablespoons dried cranberries Craisins
  • 2 tablespoons crumbled goat cheese
  • 1 tablespoon dry roasted sunflower kernels opt for unsalted if preferred
For the Dressing (Optional)

Step-by-Step Instructions
  1. In a large mixing bowl, add approximately 6-8 ounces of fresh baby spinach. Rinse if not pre-washed and pat dry.
  2. Sprinkle about 2 tablespoons of dried cranberries over the spinach and gently toss to distribute.
  3. Add 1 can of mandarin oranges, drained and rinsed, and lightly fold into the spinach.
  4. Sprinkle in about 1 tablespoon of dry roasted sunflower kernels and mix gently.
  5. Top with 2 tablespoons of crumbled goat cheese and carefully fold into the salad.
  6. Drizzle with balsamic vinaigrette if desired, and toss gently to coat all ingredients.
