Step-by-Step Instructions
  1. Preheat your grill to medium-high heat, around 400°F (200°C). Grill corn for 10–12 minutes until charred and tender.
  2. Cut kernels off the cob and add to a mixing bowl.
  3. Add diced cucumber, finely chopped red onion, and chopped cilantro to the bowl. Toss ingredients together.
  4. In a separate bowl, whisk together Greek yogurt, mayonnaise, minced garlic, lime juice, chili powder, salt, and pepper until smooth.
  5. Pour the dressing over the salad mixture and gently fold until coated.
  6. Cover and chill in the refrigerator for at least 30 minutes to enhance flavors.
  7. Before serving, adjust seasoning if necessary and garnish with cilantro and chili powder.
