  • 1 cup mozzarella cheese or provolone for a sharper flavor
  • 1 cup feta cheese or goat cheese for a different flavor
  • 5 ounces baby spinach fresh; frozen can be used if thawed and drained

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine the cream cheese, mozzarella cheese, feta cheese, and chopped spinach. Mix until creamy with no lumps.
  2. Lay the flounder fillets flat and sprinkle Old Bay seasoning evenly over each fillet.
  3. Take a portion of the filling and place it at the tail end of each flounder fillet, rolling the fillet around the filling and placing seam-side down.
  4. Drizzle olive oil over the rolled fillets and sprinkle more Old Bay seasoning on top. Preheat the oven to 350°F.
  5. Bake in the preheated oven for 20 minutes or until golden brown and flaky.
  6. Let cool slightly, then garnish with parsley or green onions before serving.
