  1. Prepare the Ribs: Begin by slicing the spare ribs into individual servings, ensuring the membrane remains intact to lock in moisture. Pat the ribs dry with paper towels to help seasoning and smoke adhere better.
  2. Preheat the Smoker: Preheat your smoker to a steady 250°F (120°C), adding peach wood chunks for a sweet, fruity smoke.
  3. Smoke the Ribs: Place the ribs on a wire rack with the bone side facing up. Allow the ribs to smoke for 3 to 3.5 hours, spritzing with apple cider vinegar every 30 to 45 minutes.
  4. Make the BBQ Sauce: In a saucepan, combine ketchup, honey, brown sugar, peach preservative, apple cider vinegar, garlic powder, onion powder, black pepper, cayenne, and kosher salt. Simmer for about 10-12 minutes until it thickens.
