  • 4 cups Water Fresh tap or filtered water
  • 1 cup Granulated Sugar Adjust based on sweetness preference
  • 2 cups Rhubarb Chopped into 1/2-inch pieces
  • 1 cup Fresh Lemon Juice From approximately 4-6 lemons

Method
 

Preparation Steps
  1. Wash the rhubarb under cold water, chop into 1/2-inch pieces, and set aside.
  2. Zest and juice the lemons, straining out any seeds.
  3. Combine 4 cups of water, 1 cup of sugar, rhubarb, lemon juice, and zest in a saucepan over medium-high heat. Bring to a boil, then lower heat and simmer for 20 minutes.
  4. Mash the rhubarb mixture lightly and cool for 10 minutes. Strain through a fine mesh strainer into a bowl.
  5. Transfer the concentrate to a clean container, refrigerate for up to 5 days or freeze for up to 6 months.
  6. To serve, mix concentrate with water in a 3:1 ratio.
