Preparation Steps
- Wash the rhubarb under cold water, chop into 1/2-inch pieces, and set aside.
- Zest and juice the lemons, straining out any seeds.
- Combine 4 cups of water, 1 cup of sugar, rhubarb, lemon juice, and zest in a saucepan over medium-high heat. Bring to a boil, then lower heat and simmer for 20 minutes.
- Mash the rhubarb mixture lightly and cool for 10 minutes. Strain through a fine mesh strainer into a bowl.
- Transfer the concentrate to a clean container, refrigerate for up to 5 days or freeze for up to 6 months.
- To serve, mix concentrate with water in a 3:1 ratio.
