- Preheat your oven to 375°F (190°C). Gather all ingredients and equipment.
- In a skillet, melt butter and sauté chicken thighs seasoned with salt and pepper for 6–7 minutes per side until golden brown. Remove and shred.
- Sauté minced garlic in the same skillet for about 2 minutes until fragrant.
- Deglaze the pan with chicken stock, scraping up bits and simmer for 4 minutes.
- Stir in cream of chicken soup, heavy cream, Boursin cheese, and cheddar cheese until smooth.
- In a bowl, combine rice, broccoli, and shredded chicken, fold in creamy sauce.
- Transfer to a greased casserole dish, top with remaining cheddar cheese, and spread evenly.
- Cover with foil and bake for 20 minutes, then uncover and bake for 10–15 minutes until bubbly and golden.
- Cool for a few minutes before serving.
