Dressing Base
  • 3 medium carrots peeled and chopped
  • 1/2 medium onion finely chopped (yellow or white)
  • 1 inch fresh ginger peeled
  • 2 tablespoons granulated sugar or substitute with honey or agave nectar
  • 3 tablespoons soy sauce use tamari for gluten-free
  • 2 tablespoons rice vinegar can substitute with white wine vinegar
  • 1 pinch salt to taste, adjust for low-sodium soy sauce
  • 1 cup canola oil or vegetable oil for emulsification
Optional Add-ins
  • 1 tablespoon sesame oil for nutty flavor
  • 1 tablespoon lemon juice for extra citrusy kick
  • 1 clove garlic finely minced

Preparation Steps
  1. Peel and chop the carrots. Finely chop the onion and peel and grate the ginger.
  2. In a blender, add the carrots, onion, ginger, sugar, soy sauce, rice vinegar, and salt. Blend on high for about 30 seconds.
  3. Slowly drizzle in the canola oil with the blender on low speed. Blend for about 1 minute until emulsified.
  4. Taste the dressing and adjust seasoning as needed. Serve immediately or store in the fridge.
