  2. Transfer the pureed watermelon into a large mixing bowl, add sugar and lime juice, mixing thoroughly until well combined, about 1-2 minutes.
  3. Line a baking sheet with parchment paper, pour the watermelon mixture onto the sheet, and spread it evenly to about 1/8 inch thickness.
  4. Preheat your oven to 170°F (75°C) and let the mixture dry in the oven for approximately 3 hours until dry to the touch and not sticky.
  5. Remove from oven and let cool for about 30 minutes. Once cool, slice the roll-ups into strips or shapes of your choice.
