  • 1 cup Sweet Rice Flour or glutinous rice flour
  • 1/4 cup Sugar or honey/agave syrup
  • 1 cup Water room temperature
For the Peaches
  • 3 Fresh Peaches ripe
For Assembling
  • 1/4 cup Cornstarch or potato starch

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine sweet rice flour and sugar. Gradually add room temperature water, stirring continuously until a smooth dough forms, about 3–5 minutes.
  2. Dust your hands with cornstarch to prevent sticking. Take a portion of the mochi dough and flatten it into a disc, place a peeled peach in the center, then pinch the dough around the peach to seal it.
  3. Prepare a steamer setup, bring water to a gentle boil, arrange the wrapped peaches in the basket, cover and steam for 15–20 minutes.
  4. Once steamed, let the mochi cool for a few minutes then refrigerate for 2 hours.
  5. Remove the Whole Peach Mochi from the refrigerator. Serve chilled, optionally with coconut ice cream or a drizzle of honey.
