- In a large mixing bowl, combine sweet rice flour and sugar. Gradually add room temperature water, stirring continuously until a smooth dough forms, about 3–5 minutes.
- Dust your hands with cornstarch to prevent sticking. Take a portion of the mochi dough and flatten it into a disc, place a peeled peach in the center, then pinch the dough around the peach to seal it.
- Prepare a steamer setup, bring water to a gentle boil, arrange the wrapped peaches in the basket, cover and steam for 15–20 minutes.
- Once steamed, let the mochi cool for a few minutes then refrigerate for 2 hours.
- Remove the Whole Peach Mochi from the refrigerator. Serve chilled, optionally with coconut ice cream or a drizzle of honey.
