  • 3 large Eggs at room temperature
  • 1/4 cup Avocado Oil can substitute with olive oil
  • 1 cup Plain Greek Yogurt or sour cream for a slightly tangy flavor
  • 2 cups Blanched Almond Flour can substitute with coconut flour (adjust amount)
  • 1/2 cup Protein Powder choose vanilla or unflavored
  • 1 tbsp Baking Powder
  • 1 tsp Xanthan Gum
  • 1 tsp Salt

Method
 

Baking Steps
  1. Preheat your oven to 300°F (150°C) and prepare a 4x4 inch square pan with parchment paper or grease it.
  2. In a mixing bowl, whisk together the eggs and avocado oil until frothy, about 1-2 minutes. Optionally, add erythritol for sweetness.
  3. Stir in the plain Greek yogurt until smooth and blended, watching for lumps.
  4. In another bowl, mix blanched almond flour, protein powder, baking powder, xanthan gum, and salt until well combined.
  5. Gently fold the dry mixture into the wet mixture using a spatula until just incorporated.
  6. Pour the batter into the prepared pan and smooth the top. Bake for 50-55 minutes until golden brown and a toothpick comes out clean.
  7. Let the bread cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely before slicing.
