- In a mixing bowl, combine softened cream cheese, shredded cheddar cheese, cooled and crumbled bacon, mayonnaise, sour cream, and hot sauce if desired. Mix until smooth and creamy, then refrigerate for at least 30 minutes.
- Preheat the oven to 190°C (375°F). Line a baking sheet with parchment paper.
- Slice a small portion off the bottom of each bagel and hollow them out slightly.
- Evenly distribute the chilled cream cheese mixture into each bagel cavity, mounding slightly over the edge.
- Bake for approximately 12-15 minutes until golden and the cheese is bubbling.
- Sprinkle with reserved bacon bits and chives before serving warm.
