  • 1 cup Cherry Tomatoes Opt for ripe, seasonal varieties.
For the Cheese
  • 1/2 cup Parmesan Cheese Grate fresh for best flavor.
For the Dressing
  • 1/4 cup Lemon Juice Freshly squeezed recommended.
  • 1/4 cup Olive Oil Extra virgin enhances flavor.

Method
 

Preparation
  1. Bring a large pot of salted water to a boil. Add pasta and cook for 8-10 minutes until al dente. Drain and rinse under cold water.
  2. In a medium bowl, whisk together lemon juice, olive oil, salt, and pepper until well combined.
  3. In a large salad bowl, combine cooled pasta, arugula, and cherry tomatoes. Toss gently.
  4. Drizzle dressing over the salad and toss to coat evenly.
  5. Adjust seasoning with salt and pepper to taste.
  6. Serve in bowls and top with extra grated Parmesan if desired.
