Step-by-Step Instructions
  1. Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Wash and dry the potatoes, slice them into 1/4-inch thick rounds, and place in a bowl with olive oil.
  3. Season potato slices with salt, arranging them in a single layer on the prepared baking sheet.
  4. Bake for 20-25 minutes, flipping halfway until golden brown and crispy.
  5. While baking, prepare toppings: dice jalapeños, chop green onions, and mix cheese.
  6. Remove baked potato slices from the oven, sprinkle cheese, add jalapeños and desired toppings.
  7. Bake for an additional 5-7 minutes until cheese is melted and bubbly.
  8. Let cool for a couple of minutes, then garnish with sour cream, green onions, and cilantro before serving.
